In my opinion quiche is about the perfect meal. You’ve got vegetables, eggs, dairy, grains, and optionally meat all in a convenient pie form factor. So I got some tips from my mom (who is a gourmet cook), looked at some recipes, and came up with my own quick variation which doesn’t involve making a pie crust from scratch or having fresh spinach on hand.
1 Frozen 9″ pie shell
4 large eggs
2/3 cup Half-n-Half
1/2 teaspoon salt
dash pepper
dash nutmeg
1/4 teaspoon onion powder
1/2 teaspoon garlic (crushed)
1 box (10 oz) frozen spinach
1/2 cup mozzarella cheese (grated)
1/2 cup swiss cheese (grated)
6 slices bacon (crumbled)Pre-heat oven to 350° F. Sauté thawed and drained spinach in butter with garlic, onion powder, salt, and pepper. Separately, beat eggs, half-n-half, and nutmeg. Mix in the cheese, spinach, and bacon and pour into the pie shell. Bake at 350° F for 45 - 60 minutes or until a fork poked in the center comes out clean.
Tips:
- Try using fresh spinach
- Make your own pie crust if you’re daring
- Mix and match different cheese types
- Place some thin tomato slices on top
- Vegetarians: skip the bacon

Hey, I love gnawing meat off a bone, wiping the fat from my beard, washing it down with a pint of beer and burping with satisfaction as much as the next guy, but quiche is also pretty damn good.

Well, I looked at about 20 Spinach Quiche recipes before I came to yours and I’m so glad I found this one, you have everything in it that I was looking for and so easy to make…….Tell your Mom she did a good job teaching you………Mom’s love to hear that stuff……..
