Happy New Year, everyone! Since one of my resolutions this year is to eat out less and cook more, I thought I’d have my first post of 2007 be a recipe. I love these crock pot meals because the preparation time is 5 or 10 minutes and I can leave it slow cooking all day while I’m at work. By the time I get home, my apartment smells fantastic and dinner is ready. Also, this only cost me about $5 or $6 to make and produced 3 meals for myself.

1 beef chuck roast
1 large potato, diced
A quarter of an onion, diced
handful of baby carrots
2 stalks celery
1 can cream of mushroom soup
1 to 1 1/2 cans of water
1 bay leaf
A few shakes of garlic powder
Salt and pepper to taste
A spoon or two of Worcestershire sauce
A couple spoons of red wine (or cooking wine)

Throw the roast in the bottom of the crock pot, dump all the other ingredients on top, give it a little stir, and cook for 6 - 8 hours on high heat or 10 - 12 hours on low heat. Enjoy.

    Sounds good! Try adding the following and see if it is even better:
    1 whole onion
    2 cloves garlic
    1/2 tsp. thyme
